Sneaking In The Greens


I try to eat healthy most of the time.  One method I've used for years (minus my first pregnancy where I gained an almost SIXTY POUNDS!!!, thank you Five Guys) is to eat generally healthy (whole foods, organic meat and poultry, lots of fruits and veggies) five to six days a week and then treat myself on the other days.  This has worked well for me and I think it's sustainable, which is an important factor when it comes to healthy lifestyle choices.  I used to be better at making salads for lunch and dinner, but that was before we had three little babes all in a row.  The main way I (and my kids) eat our vegetables now  is to sneak them into smoothies and other dishes.    


Here's the green smoothie recipe I use most days that the whole family loves: 

1 Cup Unsweetened Almond Milk
3-4 Ice Cubes
1 Banana (preferably frozen, but most days not in this house)
1/2 Small Apple (if I have one, if not the smoothie still tastes great)
1/4 Cup Oatmeal (cooked or uncooked, I've tried both and either works to add thickness)
1 Tablespoon Natural Peanut Butter
1 Tablespoon Chia Seeds
2 Handfulls of Spinach





I also threw in a bunch of spinach to Thursday night's gourmet dinner of hamburger helper (don't turn up your nose, Iowa Girl knows what she's doing!)...and nobody said a word about the wilted greens.  Bowls were empty and of course, my boys including the husband, kept asking for more--and if we're keeping it real, my preggo self definitely ate a few huge bowls.

  1. what are chia seeds? are the a necessity to the smoothie?

  2. they are the new trendy seed...remember when flax seed was popular? Now chia seed is popular in the health-food world. It's full of omega-3 oil and its a "complete" protein (vegans tend to use chia mixed with water as a replacement for eggs when they bake). Very good good to eat if you need more energy, which is my favorite benefit. I buy my huge bag of it at Costco. They are not necessary for the smoothie whatsoever but they do add a little bit of thickness to it, plus it will help fill you up more and give you more energy :)
